Recipe: Caesar Salad With Flax Croutons

What lady doesn't love a creamy, crunchy-lettuce Caesar Salad? There's only one problem though...those pesky croutons are blood sugar spiking enemies! What's a Prediabetic lady to do? Go without the salad? Go without the croutons? No way! Read on to find out how to easily make a yummy Caesar Salad with Flax Croutons that won't spike your blood sugar.


Salads are a great way to get vitamin-packed nutritious greens into your diet.

And who doesn't love topping your salad with crunchy croutons?

Unfortunately, white bread croutons are something you must avoid if you want to reverse your Prediabetes and Insulin Resistance!

All white breads will raise your blood sugar like crazy, and quick!

White bread is bad, bad, bad for ALL ladies with Prediabetes and Insulin Resistance. Croutons made from white bread are super bad too!


But Caesar Salad is super boring without croutons!!!!

I hear you.

And don’t fret. I've got instructions for how to make my Flax Croutons and a great dairy-free, egg-free Caesar Salad dressing that will keep you coming back for more and more.

First the croutons.

Ever made my Flax Bread? If you're part of our Healthy U Group you've likely made it already!

If you haven't, you should because my Flax Bread is full of blood sugar busting fiber and healthy fats that fight inflammation!

And do you know what happens when you dry out a few pieces of my flax bread?



Yup, it’s that easy!

Flax Bread Croutons

1) Cut a few pieces of Joan's Flax Bread into bite-sized pieces. (I usually cut one piece of bread per serving of salad.)

2) Place the Flax Bread pieces on a parchment-lined baking sheet.

3) Put your oven on 200 degrees and wait for about 30 to 45 minutes.

30 minutes @ 200 degrees = crunchy croutons outside, soft inside

45 minutes @ 200 degrees = crunchy croutons

4) Let the oven cool off with your croutons inside (this helps to keep your croutons crunchy).

That's it!

(Don’t worry about oxidation of your flax meal! Your bread just dries out... it doesn't get more cooked.)

Now you can have Caesar Salad With Flax Croutons!

And I haven't forgotten the dressing!

Salad dressings you buy in a bottle are full of hydrogenated oils, sugar, preservatives, chemicals and other crappy ingredients.

So make your own! It'll taste better and your body will love you for it!

I make my Caesar Salad Dressing with lots of yummy whole foods like cashews, lemons, garlic and olive oil – great for blood sugar control and great inflammation fighters!

My Caesar Salad Dressing is way better for you than those bottled salad dressings!

It's easy to make too!

Caesar Salad Dressing

(Dairy Free, Egg Free, Vegan, Paleo)

Makes Enough Dressing for One Head Of Romaine Lettuce (about 1/2 cup)

  • 1/2 cup soaked cashews (soak in hot water for 30 minutes, discard the water)
  • 1/4 cup water
  • 3 TBSP Extra Virgin Olive Oil
  • 3 TBSP Fresh Squeezed Lemon Juice (1 average-sized lemon)
  • 1 clove Garlic
  • 1/4 tsp Sea Salt
  • Fresh Ground Pepper – Generous amount
  • 1 TBSP Vegenaise (optional, for extra creaminess)
  • 1 TBSP Nutritional Yeast (optional, adds cheesy taste)

Trying to eat healthy all on your own is too darn hard.

Place all the wet ingredients in your blender. Add the garlic, cashews, salt and pepper. Blend well.

Refrigerate left over dressing for up to 5 days in the fridge.

Making The Caesar Salad With Flax Croutons

No one likes watery salad dressing!!! So make sure your lettuce is totally dry.

An Oxo Salad Spinner works great to make sure your lettuce is dry and ready for dressing.

Thanks OXO! My kitchen is full of Oxo products...LOL!

  • Tear, wash and dry one head of Romaine Lettuce
  • Toss your salad with the dressing, coating the leaves thoroughly
  • Place your salad in a large serving bowl and top with your flax croutons
  • Keep your salad in the fridge until serving time!
  • Enjoy!

Now you can have a tasty Caesar Salad and croutons! Cool!
