I love using herbs in my cooking, and nothing spruces up a salad like fresh cut herbs.

Herbs add tons of nutrients too. Two of my favorite herbs are mint and parsley.

Mint is super high in antioxidants, which help to fight inflammation. This is great because when you have Prediabetes and Insulin Resistance, you've got lots of inflammation in your body.

Foods rich in antioxidants will help you heal your body so you can reverse your blood sugar issues.

Mint Is Anti-Inflammatory

Parsley is full of calcium, vitamins and nutrients and something called myricetin. Myricetin is a plant nutrient (flavonoid) that is known to lower blood sugars and decrease insulin resistance!

Olive Oil Helps Lower After-Meal Blood Sugars

I’ve used extra virgin olive oil as part of my salad dressing. Not only does it taste great, but olive oil also helps lower your blood sugar too!

Research has proven extra virgin olive oil lowers after-meal blood sugar and LDL cholesterol.

Olive oil is your new best friend for salad dressings. Use it liberally and often to get the blood sugar lowering benefits of extra virgin olive oil.

So...with all those health benefits, my Cucumber Mint Salad -- rich in antioxidants, insulin resistance fighting myricetin, and blood-sugar-lowering healthy olive oil sounds like a great idea for Prediabetes and Insulin Resistance!

Where Are The Greens?

If you want to reverse your Prediabetes and Insulin Resistance, you need to eat greens every day.

But...you might notice there are no traditional greens in this salad.

Why not? Well, you don't need them because herbs are greens too!

If you ever get tired of Kale and romaine lettuce, bring on the herbs for a nice change...plus plenty of vitamins & minerals and lots of flavor!

RECIPE: Cucumber Mint Salad

Serves: 4

  • 1/2 bunch flat leaf parsley, washed and chopped
  • 1/2 bunch mint, washed and chopped
  • 2 cups chopped english cucumber
  • 2 cups chopped tomatoes

Trying to eat healthy all on your own is too darn hard.

  • Juice of 1/2 lemon (1/8 cup)
  • 1/4 cup extra virgin olive oil
  • Fresh Ground Pepper


Mix the dressing in a Dressing Shaker. Make sure to give a few good shakes to mix it!

Chop the veggies and herbs.

Mix together and serve!
