Peanut Butter Happy Cookie Recipe

My Peanut Butter Happy Cookie Recipe is totally safe for ladies with Prediabetes, Insulin Resistance or even Type 2 Diabetes!!!! Why? Because these cookies are full of fiber and healthy ingredients like chia seeds, sunflower seeds, nut butter and bean flour! So let's make some Peanut Butter Happy Cookies!


Peanut Butter Happy Cookie Recipe – The Ingredients

Makes: About 20 super-delish cookies


  • 1/2 c. coconut, small shred
  • 3/4 c. chopped sunflower seeds/cashews/or other nuts (use a food chopper)
  • 1 c.  whole sunflower seeds
  • 1/2 c. raisins
  • 1/4 c. chia meal
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 c. fava bean/chickpea flour (Bob's Red Mill)


  • 1 c. unsweetened applesauce
  • 1 TBSP maple syrup
  • 1/4 cup peanut butter (or any other nut butter you like)

1/3 dark chocolate bar, chopped into small pieces

Peanut Butter Happy Cookie Recipe – Directions

  1. Preheat your oven to 350 degrees.
  2. Chop the sunflower seeds in a food chopper. You can make a nut-meal or simply chop them up a bit.
  3. Mix the dry ingredients.
  4. Mix the wet ingredients with a whisk (applesauce, peanut butter and maple syrup).
  5. Add the wet to the dry and mix thoroughly.
  6. Place 1/8-of-a-cup portions (heaping soup spoon) on a parchment-lined baking sheet and flatten with a spatula. I use my medium sized scoop so all my cookies are the same size.
  7. Bake at 350 degrees for 25 to 27 minutes, depending on how brown you want them.
  8. When your cookies are piping hot out of the oven, place them on a cooling rack that is sitting in a baking pan (you'll see why the baking pan part is important in the next step!).
  9. Place a small piece of dark chocolate on each cookie. The dark chocolate will quickly melt over the top of the cookie.
  10. Let your cookies cool. The chocolate will harden.
  11. Store your cookies in a jar on the counter for up to 3 days.

Shape: You can make a traditional cookie shape with my Peanut Butter Happy Cookie Recipe OR you can shape the cookies into a mound by using a scoop.

Freezing: My Peanut Butter Happy Cookies freeze well. Freeze for up to 3 months.

NOTE! Fava Bean Flour Smells Weird! Ok, when you're mixing up this Happy Cookie Recipe, you'll notice that the bean flour smells quite different. Don’t worry...it does NOT taste like it smells!! (thank goodness!)

Prediabetes and Chocolate

Not Sure What Chia Meal Is?

Chia meal is simply whole chia seeds ground up into flour. 

It's easy to make chia meal with a blender or coffee grinder.

If you have a high speed blender like a Vitamix, it literally takes about 10 seconds to grind up 1.5 cups of chia seeds. 

After you grind up your chia seeds, store them in the fridge in a jar.

If you don’t want to make your own chia meal, you can buy chia seed meal.
