Sorghum Chia Waffle Recipe

Nothing is better on Saturday mornings than waffles and berries. But can ladies with Prediabetes still eat waffles???

Wanna sink your teeth into some waffles for breakfast this weekend? Or even make them for supper? Why not? My Sorghum Chia Waffle Recipe even works for snacks!

So get ready to be your family's hero!

(Or get your kids to make 'em! They're that easy!)

Sorghum Chia Waffle Recipe

(gluten free, dairy free)

Makes 5 waffles

Directions:

  • Mix the dry ingredients.
  • Blend the wet ingredients (eggs/milk substitute).
  • Add the wet to the dry and whisk, mixing thoroughly.
  • Let the waffle batter sit about 5 minutes so the chia can gel up a bit.
  • Cook in a waffle iron set to high.
  • These waffles do not stick. But if YOUR waffle iron has a tendency to stick, use a spray of olive oil in your waffle iron before the first waffle.

NOTES: The batter will go a bit gloopy because of the chia meal.

If your mix goes too thick, you can add a bit more milk alternative.

With the soy milk measurement above I can cook all 5 waffles and rarely need to add more soy milk to thin out the batter.

Freezing:

You can freeze your Sorghum Chia Waffles for later and heat them in an oven, on warm, for about 10 minutes.

Sorghum Chia Waffles as Snacks: 1/4 of one of these Sorghum Chia Waffles makes a great open-faced nut butter and banana snack, or even add chia jam! Delish!

Don't fret if you haven't heard of sorghum flour or chia meal!

You can make lots of really great things with them! Even drop biscuits!

Don’t Have A Waffle Maker?  

OK, I'm not really a kitchen gadget person.

I have my Instant Pot, Vitamix, my Lodge pans, some pots I got 30 years ago from my in-laws for a wedding present, and that's about it.

But recently my waffle maker died – right when I was cooking a waffle!!! 

(What a mess! We had scrambled eggs instead.)

So off to the kitchen shop I went!

I soon found out most of the waffle irons are REALLY expensive!!!

Ok, I like waffles and everything, but spending hundreds of dollars for a waffle maker sounds crazy to me...

...and the only other brand-name waffle maker that wasn't really expensive was some weird looking Cuisinart upright thing.

Honestly, I walked right past the Cuisinart Vertical Waffle Maker a whole bunch of times because I thought it was crazy to pour liquid into something on its side.

But after much resistance, I bought it and boy am I glad I did!

This machine is soooooooooo awesome!!!!!

Does it leak? Nope!

Does it make a perfect waffle every time! Yup!

Sorghum Chia Waffle Recipe

Even Diabetic-friendly flours like ground oat flakes, buckwheat, sorghum and fava/garbanzo bean make a totally awesome waffle!

As long as you DON'T go rogue with the batter, you're going to be a waffle queen!!!

(Note: you HAVE TO follow the instructions for this machine... but if you can handle using the measuring cup they give you, your waffles will be lovely.)
