RECIPE: Easy Strawberry Chia Seed Jam (Freezer Jam)

Nothing says summer like some fresh strawberry jam! But that store-bought stuff is packed with sugar! What's a Prediabetic lady to do? Go without? No way! Because in about 10 minutes you can make your own Easy Strawberry Chia Seed Jam, complete with blood-sugar-busting fiber. Here's how...


Before I tell you how to make my Easy Strawberry Chia Seed Jam (which is so easy your kids could make it...heck, my 12-year-old is my chief Chia Seed Jam maker!), first I better tell you about Chia Seeds, just in case you've never heard of them.

I'll also tell you about how Strawberries are linked with the prevention of Alzheimer's and Diabetes.

All About Chia Seeds

Chia seeds are tiny seeds that gel up when you put them in liquid.

Chia seeds are very fibery and will slow down your digestion -- which means a slower blood sugar response. What a great bonus for your body!

Your blood sugar will be lower after you eat Chia Seed Jam too!

What Are Chia Seeds

Chia seeds are also very good for rebalancing your gut microbes. (You must balance your gut microbes if you want to get your Insulin Sensitivity back).

Don’t worry if you’ve never heard of Chia Seeds before. At the end of the blog post I tell you where you can get them.

I’ll also give you some links to some other things you can make with chia seeds – like flour-free muffins, breakfast cereal and even tasty green smoothies!

So now you know...Chia Seeds definitely have to be on your daily menu!

But What About Strawberries?

Strawberries have been linked to Alzheimer's prevention because they contain a special antioxidant called fisetin.

While other foods contain fisetin (apples, onions, grapes, cucumbers, kiwis and peaches), strawberries have the most with 5x the amount of an apple!

What You Need:

  • A medium sized pot
  • 2 cups of strawberries, washed, tops removed and sliced. (You can use frozen strawberries!)
  • 1 TSP fresh squeezed lemon juice
  • 2 tsp. raw honey
  • 3 TBSP whole chia seeds
  • 2 jam jars, or jars with lids that will seal

Trying to eat healthy all on your own is too darn hard.

Wash and remove the tops from your strawberries. Chop your strawberries so you can measure 2 cups worth.

Add your strawberries to a pot. Using a potato masher, mash the strawberries up a bit. If you cut the strawberries very small you won't have to mash them.

Add medium heat to your strawberries. They will quickly turn to sauce. You don't need to add water! (5- 10 minutes)

Strawberry Pesticides

Strawberries are covered in pesticides!

Always buy organic strawberries!

"USDA tests found that strawberries were the fresh produce items most likely to be contaminated with pesticide residues, even after they are picked, rinsed in the field and washed before eating."

Environmental Working Group​

Add your lemon juice, raw honey and chia seeds.

Let your jam cool.

Place in sealable jars and refrigerate. Lasts about 5 days to a week.

You can freeze your jars of Chia Seed Jam too! (Just don’t fill them all the way to the top, unless you want your glass jars to crack!)

Not Too Sure About Sweeteners And Prediabetes?

Some ladies are scared of sweeteners when they find out they have Prediabetes.

You should be scared of refined sugars – stop eating them right away! Especially High Fructose Corn Syrup. Please promise me to never eat that junk again!

You should be frightened of Artificial Sweeteners too! They are very bad for you.

Great alternatives are: Raw Honey, Real Maple Syrup and Coconut Sugar – MAXIMUM 2 tsp per day. Learn more about healthy sugars here.
