Why I Love My Instant Pot

Ladies, one of the biggest changes you have to make in your life when you find out you have Prediabetes and Insulin Resistance is to learn to cook your food yourself! 

No more take out and fast food meals! Home-cooked high-fiber meals have to be on your menu...and the more the better.

But don't think that means you have to spend hours and hours in the kitchen. Because, you don't. There's an easy way to avoid spending a lot of time cooking...it's called an Instant Pot. Learn why I love my Instant Pot and all the cool high-fiber yummy foods I cook in mine!


I love my Instant Pot and I’d be totally lost without it. I might even go into depression! Ok, just kidding...but I'd be SUPER sad 🙁 

If you don’t know already, the Instant Pot is a self-contained Pressure Cooker. This means it doesn't go on your stove, rather it sits on your counter and you plug it into the wall.  

The Instant Pot is like a Slow Cooker on Steroids

Because the Instant Pot cooks under pressure, your food cooks very quickly. As you can imagine this is a HUGE, HUGE, HUGE time saver.

Why I Love My Instant Pot

I'm very busy with family stuff, job stuff and my 10,000 steps per day walking habit.

Bottom line...even though I want to eat healthy food, I can’t spend hours and hours in the kitchen everyday!

If Pots Could Talk

And thanks to my Instant Pot, I don’t have to spend hours cooking!

Whether I'm cooking my own dry beans for my next batch of hummus or chickpea chocolate cookies, or my next bean bowl, or batch-making chili for my next winter-hike, my Instant Pot is busy in the kitchen so I don't have to be.

So, I love my Instant Pot because it saves me sooooooo much time!

It feels pretty good to walk in the front door, smell supper cooking, and have supper on the table in about 15 minutes! Thanks, Instant Pot!

How Long Does It Take to Cook Food in the Instant Pot?

Because the Instant Pot cooks under pressure, you'll find your cooking times are super quick compared to cooking something on the stove or in the oven.

Here are some examples of how long it takes to cook stuff in my Instant Pot:

  • Chili = 35 minutes
  • Lentil Stew = 7 minutes
  • Soaked Chickpeas = 10 to 15 minutes
  • Soaked Pinto Beans = 6 to 9 minutes
  • Whole Chicken = 8 minutes
  • Hard Boiled Egg = 5 minutes
  • Whole Red Potato = 12 minutes
  • Baby Potatoes = 8 to 10 minutes
  • Sweet Potato = 12 to 15 minutes
  • Butternut Squash = 4 to 6 minutes
  • Oatmeal (thick flakes) = 3 minutes
  • Steel Cut Oats = 3-5 minutes
  • Quinoa = 1 minute
  • Brown Rice = 20 minutes

Which Instant Pot Is the Best?

The first thing to consider is how FANCY your Instant Pot will be.

You probably don't want to go with one of the lower-end models. For example, the low-end Lux model does NOT have the high and low pressure feature like the other models have.

But you also don't need to go with the top-of-the line models either. For example, you don't really need your Instant Pot to hook into WiFi...unless you like that sort of thing.  

My recommendation is to get one of the mid-range models.

Then there's just the SIZE of your Instant Pot to consider. 

Instant Pot has 3 sizes and a few different models. There are tiny Instant Pots, medium-sized Instant Pots, and large Instant Pots.

Simply pick the SIZE that matches the size of your family. Easy!

So...that's the story of why I love my Instant Pot!
